A favourite of George Clooney, Positano’s Il San Pietro is renowned for its luxury, discretion, five-star warmth and – as of a mega $3.2million renovation – now, too, its one-of-a-kind, two-storey eco-kitchen. Producing every ingredient used by the hotel’s Michelin-star restaurant Zass, this incredible 400sqm feat of engineering uses a quarter of the electricity its peers do and boasts purified air, no open flames or gas, all organic waste composted for the kitchen gardens, a cleaning regime consisting solely of vinegar, and the official title of world’s ‘most environmentally friendly kitchen’. Most incredibly, the whole area is completely sealed off at 2am each day and sanitised by ozone, the same cleaning system used by NASA and in hospital surgeries. As if you needed another reason to visit.
